Easy Strawberry Vinaigrette Dressing

This strawberry vinaigrette is fresh, bright, and lightly sweet with a smooth texture and a pop of lime. It comes together quickly in a small food processor and works well on green salads, fruit salads, grilled chicken salads, or summer side salads.

Ingredients

  • 2/3 cup roughly chopped strawberries
  • 3 TBSP apple cider vinegar
  • 2 TBSP honey
  • 2 TBSP fresh lime juice
  • Zest of one fresh lime
  • 1/2 tsp salt
  • 1/3 cup olive oil

Instructions

  1. Add the strawberries, apple cider vinegar, honey, fresh lime juice, lime zest, and salt to a small food processor. Process until the strawberries are fully broken down, stopping to scrape down the sides as needed.
  2. With the food processor running, slowly stream in the olive oil until the dressing is smooth and slightly thickened.
  3. Serve immediately or refrigerate until ready to use.

Notes

  • Substitute balsamic vinegar for a deeper, slightly sweeter flavor
  • Shake or stir before serving if separation occurs
