This Sausage Hash Brown Breakfast Casserole is loaded with shredded hash browns, savory breakfast sausage, fluffy eggs, and plenty of cheddar cheese. It’s an easy, family-friendly breakfast that can feed a crowd and is perfect for weekends, holidays, or busy mornings.

Ingredients

  • 1 pound mild or original breakfast sausage
  • 24–26 ounces frozen shredded hash browns, thawed
  • 4 tablespoons butter, melted
  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • OPTIONAL INCLUSIONS:
    • Tomatoes
    • Onions
    • Bell peppers
    • Mushrooms
    • Spinach

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
  2. Add the breakfast sausage to a large skillet over medium heat. Cook, breaking it into small crumbles, until browned and cooked through. Drain any excess grease.
  3. Toss the thawed shredded hash browns with the melted butter. Spread them evenly across the bottom of the prepared baking dish.
  4. Sprinkle the cooked breakfast sausage evenly over the hash browns.
  5. If you are using any additional vegetables, add them on top of your sausage layer.
  6. Top with 1 1/2 cups of the shredded cheddar cheese.
  7. In a large bowl, whisk together the eggs, milk, salt, garlic powder, onion powder, and black pepper until well combined.
  8. Pour the egg mixture evenly over the hash browns, sausage, and cheese.
  9. Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top.
  10. Bake for 40–50 minutes, or until the eggs are set in the center and no longer look wet.
  11. Allow the casserole to rest for 5–10 minutes before slicing and serving.

Notes

  • Hash browns: Thaw the frozen hash browns before assembling the casserole so they cook evenly.
  • Sausage: Use mild or original breakfast sausage for a classic breakfast flavor. Hot breakfast sausage can be used if you prefer more spice.
  • Cheese: Freshly shredded or bagged shredded cheddar will both work. You can also substitute Colby Jack or a cheddar blend.
  • Make ahead: Assemble the casserole, cover tightly, and refrigerate overnight. Bake the following morning. It may need a few additional minutes in the oven when baked straight from the refrigerator.
  • Doneness: The center should be completely set before removing the casserole from the oven. If the edges are browning before the middle is finished, loosely cover the dish with foil for the remainder of the baking time.
  • Make-Ahead Overnight Option: Assemble the casserole as directed, but do not bake. Cover tightly and refrigerate overnight. In the morning, remove the casserole from the refrigerator while the oven preheats to 350°F. Bake as directed, adding about 5–10 minutes to the baking time if needed, until the eggs are completely set in the center.

  • Bake and Reheat Option: You can also bake the casserole the night before. Allow it to cool, cover, and refrigerate overnight. The next morning, cover the casserole with foil and reheat at 325°F until warmed through, about 20–30 minutes. Individual slices can also be reheated in the microwave.
