This easy pineapple mango salsa with black beans is fresh, colorful, and full of sweet and savory flavor. Made with juicy pineapple, ripe mango, black beans, red onion, cilantro, jalapeño, and fresh lime juice, it’s delicious with tortilla chips or served over tacos, chicken, or fish.

Ingredients

  • 1 ripe mango, peeled and diced
  • 1 cup fresh pineapple, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • ⅓ cup finely diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely diced
  • Juice of 1 lime
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder

Instructions

  1. Add the diced mango, pineapple, black beans, red onion, cilantro, and jalapeño to a medium mixing bowl.
  2. Add the fresh lime juice, salt, and garlic powder.
  3. Gently stir until everything is evenly combined.
  4. Taste and adjust the salt or lime juice if needed.
  5. Serve immediately, or cover and refrigerate until ready to serve.

Notes

  • For a milder salsa, leave out the jalapeño or be sure to remove all of the seeds and ribs before dicing.
  • For more heat, leave some of the jalapeño seeds in or add additional jalapeño to taste.
  • Drain and rinse the black beans well, then allow the excess water to drain before adding them to the salsa.
  • For the best texture, dice the mango and pineapple into fairly small, similar-sized pieces.
  • This salsa is delicious served with tortilla chips or spooned over tacos, burrito bowls, grilled chicken, or fish.
