Ingredients

  • 3–4 ripe bananas, mashed
  • 1/3 cup butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda

  • 1 1/2 cups all-purpose flour

Optional Mix-Ins

  • 1 cup chopped walnuts
  • 1/2 cup mini chocolate chips

Optional Topping

  • Sprinkle additional chopped walnuts or mini chocolate chips over the batter before baking.

Instructions

  1. Preheat the oven to 350°F. Grease an 8.5 x 4.5-inch loaf pan with butter or nonstick cooking spray.
  2. In a large mixing bowl, mash the bananas.
  3. Stir in the melted butter, sugar, beaten egg, and vanilla until well combined.
  4. Add the baking soda, baking powder, cinnamon, and salt. Stir until incorporated.
  5. Add the flour and stir just until no dry streaks remain.
    1. If desired, gently fold in the chopped walnuts, mini chocolate chips, or both.
  6. Pour the batter into the prepared loaf pan. If desired, sprinkle additional walnuts or mini chocolate chips over the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • The riper your bananas are, the sweeter and more flavorful your banana bread will be.
  • Avoid overmixing after adding the flour to keep the loaf soft and tender.
  • Check for doneness around the 50-minute mark since ovens vary.
  • This recipe is delicious plain or with either optional mix-in—or both!
  • Enjoy warm with butter, cream cheese, or your favorite honey butter.
