Loaded Sheet Pan Nachos are an easy dinner when I want something everyone can customize without making separate meals. I start with tortilla chips, taco meat, and plenty of cheese, then add the fresh toppings after baking so everyone can make their section the way they like it.

That works especially well in our house because some of mine like all the things on their nachos, while some like none of the things. I can load up one section with lettuce, tomatoes, avocado, corn, olives, and onion while leaving another section much more basic.

I use my Ground Beef Taco Meat for the base. It’s seasoned with my Homemade Taco Seasoning, so a lot of the prep can be done ahead of time.

For an even heartier dinner, mix Cilantro Lime Rice or Easy Homemade Spanish Rice right into the taco meat. That’s what I did with the batch you see in some of these photos.

And if you really want to make them good, drizzle a little Baja Chipotle Sauce over the top. It’s smoky, creamy, a little spicy, and very, very good on these nachos.

How to Make Loaded Sheet Pan Nachos

The key to good sheet pan nachos is not piling the chips too high.

Cover a parchment-lined sheet pan with tortilla chips, spreading them out so you have plenty of surface area for the meat and cheese.

Next, scatter the prepared Ground Beef Taco Meat over the chips. Try to distribute it across the whole pan instead of concentrating it in the middle. That gives you more fully loaded chips when it’s time to eat.

For heartier nachos, stir prepared Cilantro Lime Rice or Easy Homemade Spanish Rice directly into the warm taco meat before adding it to the chips. I like this better than sprinkling rice separately because you get a little of both in each bite.

Cover the meat with shredded cheese, making sure to get some toward the outside edges too. The nachos only need a short trip into a 400°F oven.

Bake until the cheese has completely melted and everything is hot, about 5–7 minutes.

Once the cheese melts, the nachos are ready for all those fresh toppings. I add corn, onion, black olives, lettuce, tomatoes, and avocado after baking. This keeps the fresh ingredients fresh instead of warming and wilting them in the oven.

This is also where you can customize the nachos for your family. Some of mine like all the things, and some like none of the things. Leave part of the pan more basic, then pile the toppings onto the sections for the people who want them.

For the sour cream, I use a really simple trick. Spoon sour cream or Greek yogurt into a small zip-top bag and squeeze it toward one corner. Snip off just the very tip, then drizzle it back and forth across the nachos. You get those nice thin lines without having to thin the sour cream first.

Finish everything with salsa and any other toppings you like.

A drizzle of Baja Chipotle Sauce is optional, but I highly recommend it. Serve the nachos right away while the cheese is warm and the chips are still crisp.

  • 8–10 ounces tortilla chips, or enough to cover a large sheet pan
  • 1 pound prepared Easy Ground Beef Taco Meat
  • 2½ cups shredded Mexican-blend cheese

  • ½ cup corn, drained if canned
  • ½ cup diced onion
  • 1 small can sliced black olives, drained
  • 1–2 cups shredded lettuce
  • 2 Roma tomatoes, diced
  • 1 avocado, diced
  • Sour cream or plain Greek yogurt, as desired

Instructions

  1. Preheat the oven. Preheat the oven to 400°F.
  2. Assemble the nachos. Spread the tortilla chips in a single, even layer over a large rimmed sheet pan. Sprinkle the prepared Taco Meat evenly over the chips, followed by the shredded cheese.
  3. Bake. Bake for 5–7 minutes, or until the cheese is completely melted and the taco meat is heated through.
  4. Add the toppings. Remove the nachos from the oven. Top with corn, diced onion, black olives, shredded lettuce, diced tomatoes, and avocado.
  5. Add the sour cream. Spoon the sour cream or Greek yogurt into a small zip-top bag and push it toward one corner. Snip a very small piece from the corner and drizzle it back and forth over the nachos.
  6. Finish and serve. Add salsa and, if desired, drizzle with Homemade Baja Chipotle Sauce. Add any other optional toppings and serve immediately.

Notes

For Heartier Nachos: Mix 1–1½ cups prepared Cilantro Lime Rice or Spanish Rice directly into the warm taco meat before assembling the nachos. Layer the taco meat and rice mixture over the chips, top with cheese, and bake as directed.

Easy Sour Cream Drizzle: Put sour cream or Greek yogurt in a small zip-top bag, squeeze it into one corner, and snip just the tip off the bag. Pipe it back and forth over the nachos for thin, even lines. There’s no need to thin the sour cream first.

Keep the Chips Crisp: Add the lettuce, tomatoes, avocado, salsa, and sour cream only after the nachos come out of the oven.

Customize Them: Black beans, jalapeños, green onions, cilantro, and fresh lime are all easy additions.

Best Served Fresh: Loaded nachos are best eaten right away while the chips are crisp and the cheese is still warm.

Black Bean Nachos: Add drained and rinsed black beans for extra protein and a more filling meal.
