This homemade Yum Yum Sauce is creamy, slightly sweet, and just like the sauce served at Japanese steakhouses. It’s an easy make-ahead hibachi sauce for chicken, steak, shrimp, fried rice, and vegetables.

Ingredients

  • 1 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon butter, melted
  • 1 tablespoon mirin
  • 2 teaspoons rice vinegar
  • ¼ teaspoon paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • 1 tablespoon granulated sugar
  • 1–2 tablespoons water, as needed for desired consistency
  • Optional: a few splashes of hot sauce or a pinch of cayenne pepper, for heat

Instructions

  1. Add the mayonnaise, ketchup, melted butter, mirin, rice vinegar, paprika, garlic powder, onion powder, and granulated sugar to a small bowl.
  2. Whisk until completely combined and smooth.
  3. Add the water, 1 tablespoon at a time, whisking until the Yum Yum Sauce reaches your preferred consistency.
  4. Cover and refrigerate for at least 2 hours before serving. For the best flavor, refrigerate overnight.
  5. Stir before serving and enjoy with hibachi-style chicken, steak, shrimp, fried rice, or vegetables.

Notes

  • Don’t skip the chill time. The sauce tastes better after the flavors have had time to blend.
  • Start with 1 tablespoon of water. Add the second tablespoon only if you prefer a thinner, more pourable Japanese steakhouse-style sauce.
  • For a little heat, add a few splashes of hot sauce or a pinch of cayenne pepper.
  • For a slightly smoky variation, add a small pinch of smoked paprika.
  • Store leftover Yum Yum Sauce in an airtight container in the refrigerator for up to 1 week.
