This easy homemade sour cream comes together with just four simple ingredients. Perfect when you’ve run out of sour cream, this rich and creamy homemade sour cream thickens in the refrigerator and works well for baked potatoes, tacos, dips, chili, and your favorite recipes.

I make 2 cups at a time because we’re a large family, but feel free to start with half the recipe if you need to!

Ingredients

  • 2 cups heavy whipping cream
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons lemon juice
  • ¼ teaspoon fine sea salt

Instructions

  1. In a medium mixing bowl or mason jar, stir together the heavy whipping cream, distilled white vinegar, and fresh lemon juice until fully combined.
  2. Let the mixture rest at room temperature for 10–15 minutes.
  3. Stir again until smooth.
  4. Stir in the sea salt.
  5. Cover and refrigerate for at least 2 hours, or until slightly thickened.
  6. Stir before serving and store any leftovers in the refrigerator.

Notes

  • This recipe is intended as a quick sour cream substitute and is not a cultured sour cream.
  • For the best texture, refrigerate overnight before using if time allows.
  • If the mixture is thicker than you’d like, whisk in a tablespoon of heavy cream before serving.
  • If you’d like a slightly tangier flavor, stir in an additional ½ teaspoon of fresh lemon juice after chilling.
  • Delicious on baked potatoes, tacos, nachos, chili, baked goods, and creamy dips.

Storage

  • Store in an airtight container in the refrigerator for up to 5 days. Stir well before each use, as some separation may occur naturally.
