This easy tater tot casserole combines seasoned ground beef, a creamy sauce, crispy tater tots, and melted cheddar for a simple, family-friendly dinner.

Ingredients

  • 1.5 lbs ground beef
  • 1 teaspoon garlic salt
  • 1.5 teaspoons onion powder
  • Salt and pepper to taste
  • 1 package frozen tater tots (about 32 oz)
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 can corn, drained
  • ½ cup plain greek yogurt or sour cream (or more, we usually use closer to 3/4 cup)
  • 1 cup shredded cheddar cheese
  • Fresh Parsley or chives for garnish (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Brown ground beef in a large skillet and chop with meat chopper over medium heat. Drain excess grease.
  3. Season beef with garlic salt and onion powder, salt and pepper to taste, stirring to evenly coat.
  4. Mix in cream of mushroom soup, corn, and sour cream until fully combined.
  5. Spread mixture evenly into a 9×13 baking dish.
  6. Arrange frozen tater tots evenly over the top, sprinkle evenly with shredded cheddar cheese
  7. Bake uncovered for 25 minutes.
  8. Top with fresh parsley or chives if using.
  9. Let rest a few minutes before serving.

Notes

Cheese on top: Sprinkling the cheese over the tater tots helps create a golden, melty topping and adds extra flavor in every bite.

Crispier tots: For extra crispiness, spread the tater tots in a single layer and bake uncovered.

Make ahead: Assemble the casserole, cover tightly, and refrigerate up to 24 hours before baking.

Freezer friendly: Assemble unbaked, wrap well, and freeze for up to 2 months. Thaw overnight in the refrigerator before baking.

Substitutions: Cream of celery can be used instead of cream of mushroom.

Rest before serving: Let the casserole sit for about 5 minutes after baking so it sets up and serves cleanly.
