These Southwest Breakfast Burritos are a hearty, make-ahead breakfast perfect for busy mornings. Packed with bacon, sausage, scrambled eggs, crispy hash browns, cheddar cheese, and a drizzle of chipotle sauce, they’re assembled in a big batch and frozen so you always have a warm, satisfying breakfast ready to go.

Ingredients

  • 1 lb bacon, cooked and chopped
  • 1 lb breakfast sausage, cooked and crumbled
  • 8 eggs, scrambled
  • 1 lb frozen hash browns or southern-style diced potatoes, cooked
  • 1–2 cups shredded cheddar cheese (depending on how cheesy you like it)
  • 10–12 burrito-size tortillas
  • Baja chipotle sauce (Subway style)

Optional Toppings

  • Diced onion (yellow or red work well)
  • Halved cherry tomatoes
  • Sliced jalapeños
  • Additional shredded cheddar cheese
  • Sliced Avocado

Instructions

  1. Cook the bacon, breakfast sausage, and hash browns according to package directions. Drain any excess fat and allow them to cool slightly.
  2. In a skillet, scramble the eggs until just set. Allow them to cool slightly before mixing with the other ingredients.
  3. In a large mixing bowl, combine the cooked bacon, sausage, scrambled eggs, hash browns, and shredded cheddar cheese. Stir until evenly combined.
  4. Lay the tortillas out on a large work surface.
  5. Divide the filling mixture evenly among the tortillas, placing the filling in the center of each tortilla.
  6. Add optional toppings such as diced onion, cherry tomatoes, or sliced jalapeños if desired.
  7. Drizzle a small amount of Baja chipotle sauce over the filling and sprinkle with additional cheese if desired.
  8. Fold in the sides of each tortilla and roll tightly to form burritos.
  9. Wrap each burrito individually in aluminum foil and place them into a freezer-safe zipper bag.
  10. Freeze until ready to use.

Notes

Freezer Instructions

Store wrapped burritos in a freezer bag for up to 3 months.

Reheating

Microwave:
Remove foil and heat for 1–2 minutes, flipping halfway through.

Oven:
Heat wrapped in foil at 350°F for 25–30 minutes.
