These no bake birds nest cookies are an easy Easter dessert made with chocolate, butterscotch, crunchy chow mein noodles, and pastel candy eggs. They set up quickly and are perfect for spring gatherings.

Ingredients

  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 3 1/2 cups chow mein noodles
  • About 1/2 cup Cadbury mini eggs

  2. Line a baking sheet with parchment paper and set aside.
  3. In a microwave-safe bowl, melt the chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until fully melted and smooth.
  4. Add the chow mein noodles to the melted chocolate mixture and stir until completely coated.
  5. Using tongs, scoop portions onto the prepared parchment and shape into small nest mounds, creating a slight indentation in the center.
  6. Immediately place 2–3 Cadbury mini eggs into the center of each nest.
  7. Let cool at room temperature for about 20 minutes, or until the chocolate has fully set.
  8. Enjoy!

  • Tongs – Highly recommended for forming the nests without the chocolate sticking to your hands.
  • Parchment paper – Prevents sticking and makes cleanup easy.

Notes

  • Tongs are strongly recommended. The mixture is very sticky and messy to handle with fingers.
  • For a white chocolate variation, substitute white chocolate chips for the semi-sweet chocolate.
  • For a peanut butter chocolate flavor, replace the butterscotch chips with peanut butter chips.
