Fruit Pizza (Sugar Cookie Crust with Cream Cheese Frosting)

This easy fruit pizza starts with a soft sugar cookie crust topped with smooth cream cheese frosting and fresh fruit. A colorful dessert that’s perfect for summer gatherings, potlucks, and family celebrations.

Ingredients

Sugar Cookie Crust

  • ½ cup salted butter, softened (unsalted is fine too, just increase salt by 1/4 tsp)
  • ¾ cup granulated sugar
  • 1 large egg (room temp)
  • 1.5 tsp vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp baking powder
  • 1 1/2 tsp cornstarch
  • ¼ tsp salt

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 cups powdered sugar

Fruit Topping

  • 3 cups fresh chopped fruit – a ratio I like is:
    • 2 kiwi, peeled and sliced
    • 1 cup strawberries, sliced
    • 1  cup blueberries
    • ¼ cup blackberries

Optional glaze:

  • 2 TBSP apricot jam
  • 1 tsp water

Instructions

Make the cookie dough. 

  1. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy. (About 3 minutes)
  2. Add the egg and vanilla extract and mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt. Add the dry ingredients to the butter mixture and mix until a soft dough forms.
  4. Cover with plastic wrap and chill in the fridge for 30 minutes.
  5. Preheat oven to 350°F. Line a pizza pan or baking sheet with parchment paper.

Form the crust.

  1. Press the dough into a 10–12 inch circle on the prepared springform pan, baking sheet, or pizza pan.
  2. Bake for 16–18 minutes, until the edges are lightly golden. The center should remain soft.
  3. Allow the crust to cool completely before frosting.

Prepare the frosting & Assemble the Pizza.

  1. Beat the cream cheese and butter together until smooth. Add vanilla extract and powdered sugar, mixing until creamy.
  2. Assemble the fruit pizza.
    Spread the cream cheese frosting evenly over the cooled cookie crust.
  3. Arrange sliced kiwi, strawberries, blueberries, and blackberries over the frosting.
  4. Optional: warm apricot jam with water and lightly brush over the fruit for shine.

Notes

Allow the cookie crust to cool fully before adding frosting so it doesn’t melt.

Arrange fruit just before serving for the freshest appearance.

The apricot glaze gives the fruit a bakery-style shine but is optional.
