Fruit pizza is one of those desserts that instantly brightens a table. The soft sugar cookie crust, creamy frosting, and colorful fresh fruit make it both nostalgic and visually beautiful. It’s simple to make but always looks impressive when sliced.

This version starts with a thick sugar cookie crust baked in a springform pan so the edges stay soft while still holding their shape. Once cooled, the crust is topped with smooth cream cheese frosting and finished with vibrant fresh fruit.

The cookie base is very similar in texture to my Soft Sugar Cookie Cake, which uses the same tender cookie technique. The frosting layer is inspired by my Classic Cream Cheese Frosting (Smooth, Tangy, and Not Too Sweet), creating the perfect balance between sweet cookie and fresh fruit.

Fruit pizza works beautifully for spring gatherings, summer barbecues, birthdays, and holiday dessert tables. It pairs perfectly alongside treats like Chocolate Chip Cookie CakePerfect Classic Cheesecake, or Easy Oreo Cheesecake when you want a colorful dessert spread.

This fruit pizza is also a great summer dessert, and if you’re serving a crowd, it pairs well with simple cakes like my Banana Cream Bundt Cake and uses the same cream cheese frosting for an easy dessert spread.

Ingredients for homemade fruit pizza including butter, egg, flour, sugar, cornstarch, baking powder, vanilla extract, powdered sugar, and fresh strawberries, kiwi, blueberries, and blackberries in a bowl.

Equipment

Stand Mixer – A stand mixer helps cream butter and sugar properly so the cookie crust bakes soft and tender.

11-Inch Springform Pan – A springform pan creates thick cookie edges and allows the fruit pizza to release cleanly once chilled.

Parchment Paper – Parchment prevents sticking and makes removing the crust much easier.

Rubber Spatula – A spatula helps smooth the cookie dough evenly before baking and spread the frosting across the crust.

Mixing Bowls – Useful for preparing frosting and organizing fruit toppings before assembling the pizza.

How to Make

The base of this fruit pizza begins the same way many soft cookie recipes do — by properly creaming butter and sugar. This step is more important than it might seem.

Butter and sugar being creamed together in a stand mixer for fruit pizza sugar cookie crust.

When the butter and sugar are beaten together until light and fluffy, tiny pockets of air form in the mixture. Those air pockets help the cookie crust bake tender rather than dense.

Once the egg and vanilla are incorporated, the dough begins to develop structure. The flour mixture includes a small amount of cornstarch, which helps create a softer cookie crumb. Cornstarch limits gluten development slightly, keeping the finished crust tender even after chilling and slicing.

After the dough comes together, chilling it briefly allows the butter to firm up again. This makes the dough easier to press evenly into the pan and helps prevent excessive spreading while baking.

Using a springform pan changes the texture slightly compared to traditional fruit pizza baked on a sheet pan. The thicker crust creates a soft, bakery-style cookie base that stays sturdy enough to support frosting and fruit. When the crust comes out of the oven it should look slightly underbaked with barely golden edges. The cookie base will continue to firm up and bake as it cools. DO NOT overcook or you will have a crumbly cookie base!

Once baked, the crust should cool completely before the topping is added. Cream cheese frosting spreads easily over the cooled cookie layer and creates a smooth base that helps hold the fruit in place.

The final step is arranging the fruit. Strawberries, kiwi, blueberries, and blackberries create both color and flavor contrast. Whether arranged in rings or scattered across the top, the fruit transforms the simple cookie base into a bright, fresh dessert.

Ingredients

Sugar Cookie Crust

  • ½ cup salted butter, softened (unsalted is fine too, just increase salt by 1/4 tsp)
  • ¾ cup granulated sugar
  • 1 large egg (room temp)
  • 1.5 tsp vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp baking powder
  • 1 1/2 tsp cornstarch
  • ¼ tsp salt

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 cups powdered sugar

Fruit Topping

  • 3 cups fresh chopped fruit – a ratio I like is:
    • 2 kiwi, peeled and sliced
    • 1 cup strawberries, sliced
    • 1  cup blueberries
    • ¼ cup blackberries

Optional glaze:

  • 2 TBSP apricot jam
  • 1 tsp water

Instructions

Make the cookie dough.

  1. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy. (About 3 minutes)
  2. Add the egg and vanilla extract and mix until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt. Add the dry ingredients to the butter mixture and mix until a soft dough forms.
  4. Cover with plastic wrap and chill in the fridge for 30 minutes.
  5. Preheat oven to 350°F. Line a pizza pan or baking sheet with parchment paper.

Form the crust.

  1. Press the dough into a 10–12 inch circle on the prepared springform pan, baking sheet, or pizza pan.
  2. Bake for 16–18 minutes, until the edges are lightly golden. The center should remain soft.
  3. Allow the crust to cool completely before frosting.

Prepare the frosting & Assemble the Pizza.

  1. Beat the cream cheese and butter together until smooth. Add vanilla extract and powdered sugar, mixing until creamy.
  2. Assemble the fruit pizza.
Spread the cream cheese frosting evenly over the cooled cookie crust.
  3. Arrange sliced kiwi, strawberries, blueberries, and blackberries over the frosting.
  4. Optional: warm apricot jam with water and lightly brush over the fruit for shine.

Notes

Allow the cookie crust to cool fully before adding frosting so it doesn’t melt.

Arrange fruit just before serving for the freshest appearance.

The apricot glaze gives the fruit a bakery-style shine but is optional.
