Ingredients

  • 12 oz Homemade or store bought Fettuccine
  • Prepared Garlic Herb Chicken Breast
  • ½ cup butter
  • 2 cups heavy whipping cream
  • 3 cloves garlic, minced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • 2 cups freshly grated Parmesan cheese
  • 2 tsp cajun seasoning. (DIY tip – Make your own Cajun Seasoning!)
  • Optional: shaved parmesan
  • Optional: Diced tomatoes

Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine according to instructions if using Homemade Pasta or to package directions if store bought until al dente. Reserve 1/2 cup pasta water before draining.
  2. In a large skillet or saucepan over medium-low heat, melt the butter.
  3. Add the heavy cream and bring to a gentle simmer. Cook for 3–4 minutes, stirring occasionally. Do not boil — gentle heat keeps the sauce smooth.
  4. Stir in the minced garlic, salt, black pepper, Italian seasoning, and Cajun seasoning. Cook about 1 minute, just until fragrant.
  5. Reduce heat to low and gradually whisk in the Parmesan cheese until fully melted and the sauce becomes velvety.
  6. If using, stir in the cream cheese until smooth.
  7. Simmer another 2–3 minutes until the sauce thickens enough to coat the back of a spoon.
  8. If the sauce becomes too thick, add a splash of reserved pasta water, additional cream, or milk to loosen.
  9. Toss immediately with hot pasta and diced tomatoes if using and serve. Can also be used as a base for chicken, shrimp, or vegetables.
  10. Top with cooked chicken breast and shaved parmesan if using.

Notes

Always use freshly grated Parmesan for the smoothest texture.

Keep the heat low to prevent separation.

Cajun blends vary in salt and spice — taste before adding more salt.

Pasta water is the best way to adjust thickness without thinning flavor.
