This creamy Baja Chipotle Sauce is smoky, tangy, and just a little spicy. It comes together in minutes and is perfect for sandwiches, wraps, burritos, burgers, and dipping.

Ingredients

  • 1 cup mayonnaise (Store bought or Homemade)
  • 1 1/2 TBSP chipotle peppers in adobo
  • 1 1/2 TBSP buttermilk (Store bought or Homemade)
  • 1 TBSP lime juice
  • 1 tsp white vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • 1/4 tsp salt

Instructions

  1. Add the mayonnaise, chipotle peppers in adobo, buttermilk, lime juice, white vinegar, garlic powder, onion powder, smoked paprika, chipotle powder, and salt to a small food processor or blender.
  2. Blend until the sauce is smooth and creamy, stopping to scrape down the sides if needed.
  3. Taste and adjust as desired. Add a little more buttermilk if you want a thinner drizzle-style sauce, or a little more chipotle for extra heat and smoky flavor.
  4. Transfer the sauce to a jar or squeeze bottle.
  5. Refrigerate for at least 30 minutes before serving for the best flavor.

Notes

This sauce is excellent on southwest chicken sandwiches, wraps, burritos, burgers, quesadillas, and as a dip for fries.

For a milder sauce, start with a slightly smaller amount of chipotle peppers in adobo.

Store covered in the refrigerator for up to 5 days.

Shake or stir before using if it thickens in the refrigerator.
